Somewhere the should be a “tension” setting that you can apply to individual edges and vertices that’ll keep your panel corners from rounding out when you subdivide.

That sounds like something I should do after I nail down the basic shape of the car. Maybe not at all if I have to retopo (again) for the body panel lines...

I’ve never played around with Blender but other programs I’ve used you could right click an edge or point and open a “properties” dialog. One of the options was for tension, and a higher value would prevent what you’ve got going on where the fender, door, and windshield meet.
